Here at MLGW, we've been recycling paper for a long time. This year we're really focusing on using LESS paper. (We're in the process of installing FinePrint software on everyone's computers to allow them to print two to a page, front and back, etc.) One of the easiest things to do is to encourage people NOT to print out their emails (unless it is completely necessary). For example, I just added "An email hint, please don't print" to my email signature at work.
EcoFriendlyEmail.com is a nice site with a step by step process for creating nice, graphic signatures like I posted above. Even if you don't want a graphic one, there are still lots of good ideas for eco-messages to add to your email signature.
